Juicy Treats: Eating The Colors of the Rainbow

Here are two easy recipes that inject a rainbow of color into your cuisine:

Heavenly Rainbow Smoothie Recipe


Ingredients:
2 Bananas
1 Orange
1/2 cup fresh or frozen Strawberries
1/2 cup frozen Blueberries
1 persimmon
1 golden apple
1 bunch chopped and washed spinach or rainbow chard
Water if needed

Directions:

Place the ingredients in order in the blender

How about a Rainbow Salad? Mmmmmm!


The Happy Rainbow Salad Recipe

Ingredients:
2 cups Red Cabbage, thinly sliced
2 cups Green Cabbage, thinly sliced
1 Carrot, grated
1 Red Pepper, slivered
1 cup grated carrots
1 cup grated jicama
1 cup grated beet
1 cucumber, sliced
1 Yellow Pepper, slivered
1 Orange Pepper, slivered
4 tablespoons scallions, chopped
4 tablespoons fresh parsley, minced
1 tablespoons fresh cilantro, minced
1/4 cup fresh lemon juice
3 tablespoons filtered water
1 teaspoon cold pressed unfiltered olive oil
1/4 teaspoon cayenne
1/2 teaspoon pure liquid inland Sea Water (trace minerals)

Directions:

Add all ingredients in order of listing and place in a large bowl, toss and serve!

Feature Article: The Plight of Our Oceans

Have you ever wondered where the plastics we use will end up? If you’ve never given it a second thought, well you will be shocked! When I think about this question, I have to think about my own family. I was once at a holiday gathering and when I went into the pantry of my aunt and uncle’s home, I was surprised to see case after case of bottled water almost stacked to the ceiling. I asked my aunt if they recycled and she said that they don’t participate in any type of recycle program and I didn’t know whether to be shocked or angry or both. I didn’t want to seem like the recycle police and judge them, but come on recycling bottles is a no brainer. Once I calmed down, I took the time to share information with my family on why we should reduce the number of plastics we use and why it is imperative that we all recycle.

No matter where you live these days, from an urban sprawl to the countryside, recycle programs have sprouted up everywhere. This is something that I think all towns big or small can do to cut down on the amount of plastics that have turned up in our lakes, rivers and oceans. You may feel like you are just one person and maybe throwing a bottle in the trash isn’t a big deal, but nothing could be further from the truth.

I recently had an opportunity to learn about the Pacific Gyre better known as ‘The Great Garbage Patch’. It is the largest of the oceans’ garbage swills, roughly the size of Texas, containing approximately 3.5 million tons of trash. The trash which is floating midway between Hawaii and San Francisco consists of, but is not limited to, toys, shoes, plastic bags, pacifiers and bottles.

This is an excerpt taken from the website, greatgarbagepatch.org. “Much of our waste today is comprised of plastic that does not biodegrade. This waste accumulates in swirling seas of debris, where plastic to sea life ratios are 6:1; where birds and mammals are dying of starvation and dehydration with bellies full plastics; and fish are ingesting toxins at such a rate that soon they will no longer be safe to eat.

When we think about the ocean we often feel it is so vast, but rivers drain into the ocean because the ocean is downhill from everywhere. A lot of items are made from plastic polymers that do not biodegrade and have additives put into them which leach out and become part of the metabolism of sea life that ingest the plastic scraps. Because plastics are light weight, turtles, fish and birds confuse marine life for these floating plastics. Once these plastics are ingested they suppress the immune system and cause low reproductive weight.

The use of plastics endangering our environment doesn’t stop at plastic bottles, data released by the United States Environmental Protection Agency shows that somewhere between 500 billion and a trillion plastic bags are consumed worldwide each year. That is astounding, but we can all do our part to reduce that number by investing in reusable cloth bags. I recently read that Mayor Bloomberg of New York City will impose a 5 cent tax on plastic bags. New York City is not the only city to come up with this idea; San Francisco and Los Angeles have banned stores from giving out plastic bags. So it’s not a matter of paper or plastic, when you shop. Use reusable bags, it will help to reduce emissions and waste and save a number of trees from having to be cut down.

We only have one earth, let’s save it!!
