Spring is in full swing and community gardens everywhere are billowing with the first fruits of labor! This is the time for growth, abundance and colors everywhere. While Tera’s not got her own backyard, this week she’s making gardens on her window sills in preparation for her greatest green adventure yet!
Will she resist her fruit fetish and avoid plunging into the pitfalls of a high fat diet?

In the meantime, Amy is busy planting grass in the big dirt patch in the middle of her new backyard and trying to save the weeds from Zvi’s spray gun. Aside from dandelion, she doesn’t know what’s edible yet, but she definitely knows that weed killer isn’t!
In indoor gardening news, Amy and Tera are both gearing up for sunflower sprouting adventures. Neither one of us has first hand experience, so we’ll be documenting our experiences and sharing them with you soon!

I have a great suggestion for composting that I hope you can include and pass on to others who receive your newsletter...it makes it easier for the kitchen scraps to break down. Instead of merely dumping the scraps into a bin, here is what I do: I save all my scraps in a container in the fridge until I accumulate enough to blend them up with water in my blender to make a compost "soup" I do not have a bin and live in an apartment complex.... so I started mine in the back where it isn't visible and took some wood to create a frame...then I lay down the wet ingredients (compost "soup") and then put dry ingredients (usually leaves) on top and then keep layering it....once a month I usually turn it over to mix it...it breaks down much faster....I started this process the end of last september and was able to use the wonderful "black gold" to amend my vegetable garden when I planted new crops this march hope this information is helpful to one and all! keep up all that you do and spread the love, goodness and yummy raw food recipes and knowledge! namaste!

Hi, there:
I realize this email may not land in Tera's inbox, but I just wanted to tell her I had a delightful visit with her mother in the grocery store in Cardston, AB. She asked me what I was going to do with "so many lemons." (I was buying a whole bag.) I told her that I've been struggling with a health issue (mold or something else allergy) and that I'm thinking I need to stay away from balsamic vinegar, too. Thus, the lemons for dressing my salads.
We continued chatting as we bumped into each other throughout the store. She got to hear about my nine children, homeschooling, and year and a half in Japan, and she got to tell me about Tera's education, website and time in Japan…as well as her homeschooling and more. I feel like we'd all had lunch together!
Anyway, I know I need to boost my immune system. I don't have the time or inclination to live with illness…so I need to take the time to live more fully conscious of healthful choices. I'm on my way with the raw food detox. Thanks for the support and great website. It's delicious!

Q: I had every intention of doing the 7 Day Diva Detox, BUT I'm pretty concerned about the glycemic index. So many people have metabolic syndrome--I'm 25 to 30 lbs. overweight, with waist greater than 34". Don't want to fall over in that category due to high sugar content.
Again, I hear, “EAT THE FRUIT AND DRINK THE VEGGIES.” I pray that I CAN do this 3 or 7 day detox. Would LOVE to hear answer soon.

A: Hi Bonnie,
My first question for you would be, are you diabetic? Let us know if this is the case! If so, the 7 day detox would be very beneficial for you, but would need to be modified a little for you. I have worked with diabetic clients and can help you with this.
If you don't have diabetes, then you will be fine just follow the program that's laid out, and you will find the weight falling off and not you.

The phrase that you quoted is one that Jay Kordich is always saying, (Jay "The Juiceman" has been doing raw foods since he was diagnosed with cancer in his 20's, he is now in his 80's). Although it works for people, it is not necessary for everyone. The concept 'EAT THE FRUIT AND DRINK THE VEGGIES,' is a good one and if you want to do it that way, that's great. The detox diet has a lot of smoothie recipes that are just that, 'drinking your greens, etc. There is another saying that you might be familar with, 'Fruit cleanses the body, Vegetables build the body'. Something to remember.
The detox will definitely help you to lose those unwanted pounds.

Mixed Messages About Oxalic Acid
Q: Thanks. I have a question about which greens to use.
Some sources say not to use those such as lambsquarters, beet leaves, purslane, spinach, Swiss chard, parsley, amaranth leaves and sorrel. Is this true?
"Some greens are high in oxalic acid which binds with calcium to form calcium oxalate, an insoluble salt. Add these to a Green Smoothie for variety, but do NOT make an entire Smoothie out of them. They are lambsquarters, beet leaves, purslane, spinach, Swiss chard, parsley, amaranth leaves and sorrel. Leave rhubarb leaves alone, they can poison you when eaten in large quantities. Sweet baby-leaf spinach is fine to eat in quantity. It tastes like the acid has been bred out of it.
LOW in oxalic acid and good to eat in Green Smoothies are: dandelion greens and kale (more calcium than dairy), lettuce, celery, watercress, escarole, mustard greens, turnip greens, carrot tops, broccoli, asparagus, cabbage, and most other greens."

A: Hello Green Crusaders:
For one thing all greens have oxalic acid in them, but in different amounts depending on the greens. As far as being worried about it binding the calcium, you need not worry.
Let's think logically. Here's the thing, think about this, we and other animals get most of our calcium from greens. If we were not able to absorb it because of it binding with oxalic acid then there would be a lot of animals as well as humans with brittle bones, in which case there isn't.
Every herbivore animal has milk to feed their young and calcium is in it, for their young. Their young need it to build strong bones quickly so that they can run fast and avoid predators. Again they get this from greens that they eat. They don't go around saying, 'I can't eat lambs quarters or parsley,' do they? They know that greens are the best food for them. In fact they prefer it over any other food they are given.
I think ladies that you need to stop reading and worrying about what the so called experts are saying. Cause let's face it, they are all saying something different. Does that make any sense to you. I mean come on, they can't even agree.
I want you to remember something that I learned a long time ago when I was studying nutrition. What they know and what they tell you are two different things. I also want you to use your common sense, you are just as smart as anyone else. You have the ability to think. Use these when you are reading things about food, or anything else.
I'd like you to think about this as well. I'll use my family as an example, (but there are many other examples as well). I raised my children on a vegan diet, 70-80% raw. They got their calcium from greens and a small amount of nuts, and seeds each day. My children are the picture of health, they don't get sick and so they don't visit the doctor, except for a health check up once a year. They are strong, tall, and solid due to strong bones. My oldest is 6 feet tall and strong as an ox and by no means week.
I noticed in your statement that you quoted that they say, 'NOT make an entire Smoothie out of them'. Well you'll find that the recipes don't do that. You are eating the greens with fruit about 60/40. Trust me, you would never want to make an entire smoothie out of just greens, It wouldn't taste very good.
Here is another thing to remember we should always eat a variety of foods, that includes greens. You should never eat only one food in large quantities. You know the saying, 'too much of a good thing, can be bad.' And this is true. The 7 day detox and the BES program give a wide variety of foods, as well as the flexibility to chose something else that you like instead. So look over the recipes and you'll see.
One more thing. Greens build your body up, because of the high mineral content, where as fruit cleanses and detoxes the body. They make a great combination.
So eat a variety and have fun.

Natural Beauty: Pineapple Enzymatic Facial Treatment

Today I was thinking about what led me to the path of raw living foods and what immediately came to mind is the role that enzymes play in our bodies. It took me some time to fully understand the benefits that enzymes played in my diet and because of this lack of understanding; I continued to eat a diet void of foods complete in nutritional enzymes. I believe in the back of my mind, I knew the rumblings I would hear very often in my stomach were clear evidence that I had to make a powerful change in how I thought about foods.
Having adopted a majority of raw living foods into my diet in the last few years, I believe enzymes are the “work horse” in our bodies and are very important elements to aid digestion and maintain good health. If we think about the role of enzymes in very simple terms, enzymes are the “life force” that activates vitamins, minerals, proteins and other physical components within our body.
“There are two major enzyme systems in the human body. One is digestive and the other is metabolic. The digestive enzymes help break down all of the food that we eat so that it can be absorbed by the body. The metabolic enzymes help to run all of the systems of the body from respiratory system to the nervous system.
The seven categories of food (digestive) enzymes and their activities are:
• Amylase: breaks down starches
• Cellulase: breaks down fibers
• Lactase: breaks down dairy products
• Lipase: breaks down fats
• Maltase: breaks down grains
• Protease: breaks down proteins
• Sucrase: breaks down sugars*

I want to talk about an enzyme that is very beneficial in skin care treatments. Bromelain is a mixture of enzymes found naturally in the juice and stems of pineapples (Ananas comosus), a tropical fruit-bearing plant indigenous to South American countries as well as the Hawaiian Islands. Bromelain is a proteolytic enzyme, which is an enzyme that helps you digest the proteins in foods. Papaya and Pineapple are two of the richest plant sources of proteolytic enzymes.
Bromelain used in skin care treatments is an alpha hydroxy acid and is very effective in gently removing the dead skin cells by chemical exfoliation, on the surface of the skin. Enzymatic activity destroys the keratin of dead cells and the debris, allowing the skin to breathe and feel more alive and vibrant. Once the skin has been exfoliated, you will notice a visual difference in the tone and smoothness of the skin. The follicles are clearer and the skin is softened and hydrated, allowing for a deeper penetration of serums and moisturizers.
Bromelain is an anti-inflammatory agent that will benefit people who suffer with acne. People, who do suffer with acne conditions, will notice a visible difference in the way this treatment will unclog the pores and reduce inflammation of accumulated buildup of skin cells on the surface of the skin.
Honey is a natural humectant that attracts and binds water to the upper layers of the skin. Exfoliation of pineapple on sensitive skin can cause skin irritation, so honey’s natural moisturizing ability makes it a perfect fit for this treatment.
Remember the next time you’re thinking about purchasing high priced products to exfoliate your skin, look no further than the produce section of your local supermarket, farmers market or co-op and buy an organic pineapple.
Beauty Note: rub a chunk of the pineapple behind the ear a few hours before the treatment to detect any skin sensitivity.
Recipe
1/2 cup pineapple chunks
3 tablespoons honey
Puree pineapple in blender and apply in a circular motion to a cleansed face. Leave on for 10 minutes and rinse well with cool water and pat excess water from the skin. Apply the honey to the skin and leave on for 5 minutes. Rinse with cool water, pat the skin dry and apply your favorite moisturizer.

Celebrating Transformation! Another Diva Victory
I'm doing so awesome!
The Spring Cleaning BES, has gotten me past that "hurdle" I could never get over previously in going raw. It has changed my life in energy, happiness, health, self-esteem, organization, loving myself for who I am and where I'm at in this day, it's broken the bondage to caffeine I used to have in the morning, and it's given me a new relationship with food - I used to hate myself every time I "ate the wrong thing", but now I feel in control. When I feel tempted, I just stop and say, "is this what I really want for myself? Why am I wanting this anyway? Will I truly be happy about it when I'm done? If I eat something I wish I wouldn't have, I remember, "there are NO wagons", and every moment is a new moment. Sometimes I do want to eat some chocolate or some cooked veggie...hey, no problem - I enjoy it without feeling mastered by it. Don't forget exercise! I am doing it faithfully at least 4x per week, and am at the point, that if I don't - I miss it! I have greatly reduced pain to almost none in my knees (I have had surgery to repair cartilage), and back pain (due to two surgeries). I have left high blood pressure behind and that includes the terrible medicine I was on for it. And....I've lost 20 pounds!
Getting here has been hard. Detoxing was terrible - Headaches at times that would render me useless for the day, great fatigue some days, pains in my stomach after eating, and the worst...I battled a raging Yeast infection 17 days into my last BES - I went through some very difficult emotional stuff while I sorted out my "food and overeating baggage". I went through a bought of depression when it was all over, trying to figure out what my "new life" was going to be like while still cooking and feeding my family. All the while finding loving and thoughtful support in the Powder Room and from my wonderful Buddy; Patty.
But then....there was an amazing breakthrough, it all came together and I am so grateful that I didn't give up! Before I'd ever heard of RAW DIVAS, I'd cried out to God to help me get healthy and free me from the bondage of food, and I believe He led me to the BES. I AM healed and HAVE broken free!
